Is skyrim really fun and challenging? I enjoyed Oblivion and Morrowind a lot, but I think Dark Souls looks EPIC.

Yea. The main story line is boring as usual but there's basically infinite other things to do. It's more challenging than oblivion on the same difficulty but once you get used to it and know how to build your character effectively, its pretty easy.
