Let's say you're low hp, like 100/5000.
You cast Iron Skin (+100 hp) so that puts you at 200/5100.
You cancel Iron Skin, so you're at 200/5000.
You cast Iron Skin so that puts you at 300/5100.
You cancel Iron Skin, so you're at 300/5000.
etc etc.
On the other hand, if they made it so you lost that 100 hp when you cancel your buff, what would happen if you were 100/5100 and then the timer on your buff ran out? If it was -100 current hp AND -100 max hp, then you'd be 0/5000 and you'd die just from having the time limit end.
It's the same way that when you have no suit/boot/glove/helm on, and then you put them all on, you can see your max hp go up, but your current hp stays the same. Current hp won't be taken away or gained, so that your hp won't instantly hit 0 and die from taking off your suit/boot/glove/helm.
